My motherboard came with F2 preinstalled.
EDIT: Nevermind !!!! I just figured it out.
Basically, whenever I use AMD Ryzen Master to either switch between "Creator" and "Gaming" mode or to switch the memory access between "Distributed" and "Local", it kinda resets the BIOS and it turns off the virtualization, XMP is another thing that gets touched too, in fact I'm now using my 3000MHz ram with 2133MHz of speed.
That's it, I'm not going to use AMD Ryzen Master anymore or, if I need to use it, first thing I'll do when it reboots the PC is to go straight into the BIOS and re-enable XMP and virtualization.
EDIT: Today I turned the PC on and virtualization is disabled again... whatever, I'll change the CMOS battery when I'll have time, as it's trickier to get out in this motherboard (it's inside one of the M.2 slots and the CMOS battery socket is also weird and doesn't have the classic spring on one side to push and the battery falls over, so whatever, I'll just stick with it like that for now and I'll manually enable the virtualization every time...)
Oddly enough, all other settings in the BIOS are still applied, for example I still have non uniform memory access...
