I went through a long struggle to get things working and I still am so far the past 3 weeks. Hopefully these are my last few issues which I will be posting here. Hopefully my experience will save others from them should anyone come across them or are experiencing them currently.
System Specs :
-OS : Windows 7 Pro 64bit
-MotherBoard : Gigabyte AX370 Gaming 5 Rev 1.0
-Memory : G.Skill Trident Z RGB 16GB(2x8) 16CAS
-HDD: Samsung 850 Pro SATA

So.... and now I am here with hopefully my last issue that has been driving crazy. I made some progress but haven't completely solved it.
Sleep options in Windows 7 completely disappear in "Power Options"/"Control Panel" and blurred out disabled in Start Menu. This happens when I disable "SMT" in BIOS. Windows PowerCFG reports Standby State S3 isnt supported by system firmware.
But when I enable it, Sleep options come back.
Ok wonderful if they are back, then what? Well I want Gigabyte to fix this if they can so Sleep options aren't disturbed due to SMT.
This brings me to the next problem which is.. I cannot wake the PC from sleep with mouse and keyboard but only with the Power Button.
I tried Device Manager/ Mouse/Keyboard /Properties/ Allow Wake from Sleep
I tried Universal Serial Bus / AMD USB 3.0 Hub / Not allow system to turn off the usb
Still no progress as of yet.
Update :
I actually solved the problem. Boy oh boy.... was it difficult... sigh..
I got real lucky, just trying things and reading online. By luck I had set Erp in bios disabled and wake my mouse and keyboard correctly and the final settings in Windows 7 which I changed much later after midnight made it work. Again I got super lucky to get the right match of settings on both OS and bios to have it work.
Which is weird because the manual and the bios says those wake by mouse and keyboard in bios is for PS2 only and its to turn on the computer from shutdown/off state. Totally misleading or improper BIOS development. In AM3+ I could still wake it up without ERP set to disabled and any power options. But they also had dedicated always on USB ports if I am not mistaken.

Problem 1 : Ram Over-Clock Issues
-[Issue] : OverClocking RAM would not post and would power recycle 3-4 times and reset CMOS and then POST
-[Solution] : Bios Updates : F6(AGESA Update) and F7(Improved: latest At the moment)

Problem 2 : Keyboard and Mouse issues
-[Issue] : At first mouse and keyboard worked, then changing Bios settings disabled all input USB 3.0 ports. Only USB 3.1 worked.
-[Solution] : Flashing Bios in Q-FLASH with a USB Stick solved to F6 or F7 fixed it. * Also try CMOS jumper Reset.

"Legacy USB Support" = Enabled
"xHCI Handoff" = Enabled
"eHCI Handoff" = Disabled
(Basically use "Load Optimized Settings" at "Save & Exit Screen" for Windows 7 OS)

-[Issue] : So my motherboard already came with F5, and Updating with Gigabytes @bios Software was not working while booted in Windows 7.
-[Solution] : Copy over the latest Bios to a usb stick and use Q-FLASH Mode at Bios logo screen to update the bios.
