I have an X570 Aorus Master version 1.2 and my 2.5G Ethernet adapter drops it's connection every few days or so. Then I have to unplug the cord and plug it back to connect back to my router. This is too weird and sporadic. Has anyone else experienced this?

You don't have to do that...I was having the same problem a few weeks ago, and to correct it online simply go to network properties and run the network troubleshooter and it will automatically fix the dropout and restore the connection. No need to physically disconnect the modem, etc. Troubleshooter also resets the connection.
At first, I thought it was the drivers, so I went to the RealTek site and downloaded new drivers--that seemed to fix it for a while then it came back for a while. So I noticed it was using the Windows 10 driver by default--and I decided to leave it there--got tired of replacing it with the latest Realtek driver. Knock on wood--it's been several weeks since I've had a dropout! Have no idea what finally fixed it, but am still using the Windows driver instead of the Realtek.

Yes it is a known issue and Gigabyte and Realtek acknowleged it. It is actually the reason the final F31 bios wasn't posted after all. They said Realtek is working on a fix with them.

Still, this is hopeful, it means finally some recognition of the Realtek 2.5GbE crashes.
I have a Gigabyte B550I AORUS PRO AX with a Realtek 2.5GbE LAN chip (2.5 Gbit/1 Gbit/100 Mbit) and I found this topic. I keep getting the exact same error in Event Viewer: Event ID 10400, The network interface "Realtek Gaming 2.5GbE Family Controller" has begun resetting (...) Reason: The network driver has detected that its hardware has stopped responding to commands
One of the qBittorrent team members has just stated that it seems like a Realtek driver issue: github.com/qbittorrent/qBittorrent/issues/14019 "uTP is just a protocol over UDP. This is pretty clearly a driver issue to me, it should not crash with some UDP packets"

Well, glad to say that's one trouble I don't have with the RealTek...!...;) It's been weeks since it last lost a connection, glad to say. All that happened here when that was happening is that the Gateway would get dropped.

I have a Aorus pro B55 V2.
The many problems with this board includes these network dropouts.
Also the usb lags like mad.
I have the latest bios installed and did all the things i could find (driver change, win driver, realtek driver, driver rollback to older driver, change the advanced settings, 1GB etc...)
I start dayz, go to the server browser and blam network gone. 100% reproducible.

One of the developers of libtorrent (a library used in qBittorrent) just stated that reported issue of Realtek 2.5GbE controllers (such as RTL8125) resetting (Event ID 10400, source NDIS) on for example the GIGABYTE B550I AORUS PRO AX is likely caused by the Realtek hardware/drivers:
I suspect the hardware or driver isn't well tested under heavy UDP load, and fails. I don't really see anything actionable on libtorrent's part, other than recommending that users with the failing hardware either disable uTP or replace the hardware. libtorrent doesn't talk directly to the driver, it uses the operating system's API. The API guarantees that hardware is not supposed to reset by its use, similar to operating systems (normally) guaranteeing they won't kernel-panic because of system calls.
